Pancake Day!

Pancakes are great as they are so easy to make and require minimal ingredients. There are lots of recipes around but the main two ingredients are flour and milk, two common ingredient you will find in most fridges and pantries. As a child Shrove Tuesday was always so exciting as we had pancakes for dinner and dessert. My mother would make the most delicious savoury filled crepes. I still dream about them even though I haven’t had them in over 10 years. It’s probably time to start the tradition in my home. The crepes were filled with tuna and white sauce, if my childhood memory serves me correctly. After dinner we would then have pancakes for dessert filled with cinnamon sugar! The day I found out I was allergic to cinnamon was the day I mourned the loss of pancakes, what was I going to put on them now…what ever I wanted! I discovered Crepes with Nutella in Paris and that has become a favourite of mine ever since. I asked my FaceBook followers what they would put on theirs and all the responses were sweet ones – strawberry jam and cream, nutella, sugar and lemon juice, creme fraiche/yoghurt mix with berries and honey. All of these sounded delicious. That’s the great thing about pancakes is you can eat them your way, anyway! The other great thing about pancakes is you don’t have to only eat them one day a year, you can eat them any time. As a child my brothers and I would make them lots. We had an electronic crepe maker that you would dunk into the batter and then flick the pancake off when it was cooked. It was very easy to use, although you could not do the pancake pan flip – not that I have ever tried that either.

A very quick snap shot of the pancakes. I liked the yellow lemons and the blue plate but I was in a hurry because…well… I was hungry and wanted to fill them and eat them!

Delicious! I chose sweet fillings. The two towards the back have chocolate philli on them and the others have sugar and syrup.
