While reading my much loved Nigella Kitchen Cookbook I came across this recipe for Mexican lasagna. It looked fairly simple to make and as I know that my family are bean lovers I decided to make it for them the next time I went to visit. It was very easy to make and I was so happy to make it for them but I kind of anticipated that I would not like it as I am not that big on beans. Boy was I wrong. I loved it! It was so delicious! It is also a meat free dish, so great if you are having vegetarian friends round. I made it for some friends recently and one of them could not believe there was no meat in it. It’s a bright and colourful dish too, which adds to the fun and wow factor! There is no pasta in it even though it is called lasagna. Those layers are made with tortilla warps. Then there are layers of delicious tomato salsa, corn, beans and cheese. It really is a festive fun dish!
